Correct way to bake turkey demonstrated by Uncle Sam's expert cooks. Washington, D.C., Dec. 4. Note to housewives: your turkey- baking troubles will be over and the bird you serve for dinner this yuletide will be tender, juicy and flavorsome if you follow the method used by the expert cooks at the Bureau of Economics, U.S. Department of Agriculture. Continual testing and experimenting with various recipes has taught Uncle Sam's cooks that many a prize bird has become a "ham" when improperly prepared. The best recipe - so far discovered by the Bureau of Economics - is demonstrated in the following set of pictures, made under the supervision of Miss Lucy Alexander, Chief Cooking Specialist. Miss Alexander, a graduate of Vassar and the University of Illinois, has been on her present job for eleven years. Mrs. Jessie Lamb, Assistant Cook, is stuffing the turkey under the watchful eye of Miss Lucy Alexander. The turkeys on the table will go into the ovens at regular intervals, and be tasted and judged by a group of experts who are determining which diet and feeding program will produce the best flavored meat.

This (Sandpiper like) bird, as well as many other species keep watch over Moffett Field wetlands. The shorebird in this picture is a greater yellowlegs (Tinga melanoleuca) which is a common bird found in our coastal salt marsh and tidal zones in winter months.  Generally, they summer/breed up north in Canada and Alaska and then migrate in the fall to winter along the west coast of the U.S. and Mexico. KENNEDY SPACE CENTER, FLA. -- An Eastern gray squirrel pauses in its daily search for food in the Merritt Island National Wildlife Refuge, which shares a boundary with Kennedy Space Center. The Eastern gray squirrel is found in wooded, suburban, and urban areas statewide. It nests in tree hollows or leaf nests in treetops. It forages during the day, mainly early morning and late afternoon, both on the ground and in trees, living on a diet of acorns, nuts, fruits, berries, insects, and bird eggs. Food plants include cypress, buckeyes, elms, grapes, tulip trees, mulberries, and tupelo. It breeds in late winter or early spring and again in late spring or summer, bearing two to six young. Introduced to Florida in the early 1900's, this species is found statewide in areas with dense ground cover and sandy soil. Nine bands of plates cover the body from shoulder to hip and 12 bands cover the long tail. It has a small, tapered head and snout and a long tongue. Its ears are long and hairless. It has sparse white hairs on its belly. Its diet is composed of insects, especially beetles, and other invertebrates plus some plant foods such as cedars and beautyberries. It is primarily nocturnal, sedentary, solitary and a burrower. It digs a series of dens. The multiple entrances are usually protected by stumps, palmettos, or trees. Many other animals also use armadillo dens.  KSC shares a boundary with the Merritt Island Wildlife Nature Refuge. The refuge is a habitat for more than 310 species of birds, 25 mammals, 117 fishes and 65 amphibians and reptiles.
