Note to housewives: your turkey- baking troubles will be over and the bird you serve for dinner this yuletide will be tender, juicy and flavorsome if you follow the method used by the expert cooks at the Bureau of Economics, U.S. Department of Agriculture. Continual testing and experimenting with various recipes has taught Uncle Sam's cooks that many a prize bird has become a "ham" when improperly prepared. The best recipe - so far discovered by the Bureau of Economics - is demonstrated in the following set of pictures, made under the supervision of Miss Lucy Alexander, Chief Cooking Specialist. Miss Alexander, a graduate of Vassar and the University of Illinois, has been on her present job for eleven years. Mrs. Jessie Lamb, Assistant Cook, is stuffing the turkey under the watchful eye of Miss Lucy Alexander. The turkeys on the table will go into the ovens at regular intervals, and be tasted and judged by a group of experts who are determining which diet and feeding program will produce the best flavored meat.

When news was brought to camp, all soldiers chipped in to give out of their own supplies of hard tack, bully beef and bread, but that was not enough. One of the soldiers volunteered to nurse the dying mother and her little girl. Ayers, New York economist and formerly on the staff of the Consumers' Advisory Board of the defunct NRA, brought in three packages of tea and 21 cans of tomato juice to show the temporary economic committee today, and told members that deceptive sizes of cans and packages and lack of quality gradings cause housewives a good deal of shopping headache. She said that she bought all the food at retail stores yesterday, found 11 different brands and 17 sizes of tomato juice cans, with no way to determine quality except to try them all. Asking for 1 quarter lb. tea packages, she was given packages containing 1-2 oz. less than she had asked for. Even though the package was marked as to net weight. She pointed this out as being 'misleading,' even though the price may be adjusted to fit the eight

Of a family of 7 children, all but 2 work stringing tags. The oldest child is 12. The nurse of the school which these children attend, reports that they are continually being sent home because of their dirty condition. A little fellow who looked about 6 was quite an expert. The children received 20 cents for stringing a thousand tage [i.e., tags] - they tie a knot in a piece of string, and run the string thru [sic] the tag. They moisten the ends of their fingers in their mouths to tie the knots. They can string about a thousand tags in half an hour. One member of a second family which is stringing tags has impetigo, or skin disease, according to the school nurse.  Location: Newark, New Jersey.

U.S. expert on crop insurance. Washington, D.C., Sept. 21. Considered by agriculture leaders to be the nation's foremost authority on crop insurance, Roy M. Green is now in charge of Division of Agriculture Finance, U.S. Department of Agriculture. 48 years old, Green is a Native of Missouri and a graduate of the U. of Missouri. After teaching Agriculture Economics at his alma mater for a few years he transferred to the Kansas State Agriculture College at Manhattan, Kans., to teach the same subject. In 1934 he was named Vice-President of the Production Credit Corporation at Wichita, a branch of the Farm Credit Administration. Coming to Washington with the Farm Credit Administration in 1935 Green's ability as a crop insurance expert was recognized by Secretary Wallace, who drafted him for his present post. 9/21/37

One of the unsung heroes of the government service is Carroll Smith, research expert in equine fever in the Bureau of Entomology, Department of Agriculture, who since 1927 has allowed himself to be fed alive to a horde of mosquitoes. After a feeding on his arm, Mr. Smith lets the mosquitoes bite an infected guinea pig, after which they are permitted to bite an uninfected one. In this way he ascertains the extent to which mosquitoes transmit disease among horses and cattle. For his purpose the mosquitoes must be pure, says Mr. Smith in explanation of why he lets the insects feed on him instead of taking their bites out of any old animal, 4/24/1937

She is the color analyst of the U.S. Department of Agriculture and measures color as a means of grading and standardizing many agricultural products such as cotton, hay, fruits, vegetables, rice, honey, meat, grains, breads and many others.
