Note to housewives: your turkey- baking troubles will be over and the bird you serve for dinner this yuletide will be tender, juicy and flavorsome if you follow the method used by the expert cooks at the Bureau of Economics, U.S. Department of Agriculture. Continual testing and experimenting with various recipes has taught Uncle Sam's cooks that many a prize bird has become a "ham" when improperly prepared. The best recipe - so far discovered by the Bureau of Economics - is demonstrated in the following set of pictures, made under the supervision of Miss Lucy Alexander, Chief Cooking Specialist. Miss Alexander, a graduate of Vassar and the University of Illinois, has been on her present job for eleven years. Mrs. Jessie Lamb, Assistant Cook, is stuffing the turkey under the watchful eye of Miss Lucy Alexander. The turkeys on the table will go into the ovens at regular intervals, and be tasted and judged by a group of experts who are determining which diet and feeding program will produce the best flavored meat.

The only school near the Cotton Mills, Winona, Miss. A private school taught by Miss. McIntosh, who for several years off and on has conducted it, charging each pupil only one dollar a month. With only ten pupils now the job is not very lucrative. She said it was discouraging, but that many seemed to appreciate it. "What we need is compulsory education and a free school out here, which we may get before long." Children range from six to ten years. One of the ten year old boys said, "Only two more years and I'll be in the mill." Little girls added, "Four years more and I'll be there." Is now out on parole, and was working again for drug company when he got a job carrying grips in the Union Depot. He is on the job from 6:00 A.M. to 11:00 P.M. (seventeen hours a day) for seven days in the week. His mother and the judge think he uses cocaine, and yet they let him put in these long hours every day. Works every day at spinning, and has been working for some weeks. Boss saw investigator photographing him and whistled to him to get out. This photograph was gotten as he went in to work. Then boss took him off his regular job and put him helping others. Mother was furious at boss for not giving Richard and sister (a little older) more steady work. "He keeps changin em around and helpin others. I'll tell him that if he doesn't give em plenty of work there is plenty of mills that will."
