Correct way to bake turkey demonstrated by Uncle Sam's expert cooks. Washington, D.C., Dec. 4. Note to housewives: your turkey- baking troubles will be over and the bird you serve for dinner this yuletide will be tender, juicy and flavorsome if you follow the method used by the expert cooks at the Bureau of Economics, U.S. Department of Agriculture. Continual testing and experimenting with various recipes has taught Uncle Sam's cooks that many a prize bird has become a "ham" when improperly prepared. The best recipe - so far discovered by the Bureau of Economics - is demonstrated in the following set of pictures, made under the supervision of Miss Lucy Alexander, Chief Cooking Specialist. Miss Alexander, a graduate of Vassar and the University of Illinois, has been on her present job for eleven years. Mrs. Jessie Lamb, Assistant Cook, is stuffing the turkey under the watchful eye of Miss Lucy Alexander. The turkeys on the table will go into the ovens at regular intervals, and be tasted and judged by a group of experts who are determining which diet and feeding program will produce the best flavored meat.

Tea and tomato juice cause marketing headache, consumers expert tells committee. Washington, D.C., May 11. Dr. Ruth W. Ayers, New York economist and formerly on the staff of the Consumers' Advisory Board of the defunct NRA, brought in three packages of tea and 21 cans of tomato juice to show the temporary economic committee today, and told members that deceptive sizes of cans and packages and lack of quality gradings cause housewives a good deal of shopping headache. She said that she bought all the food at retail stores yesterday, found 11 different brands and 17 sizes of tomato juice cans, with no way to determine quality except to try them all. Asking for 1 quarter lb. tea packages, she was given packages containing 1-2 oz. less than she had asked for. Even though the package was marked as to net weight. She pointed this out as being 'misleading,' even though the price may be adjusted to fit the eight

Of a family of 7 children, all but 2 work stringing tags. The oldest child is 12. The nurse of the school which these children attend, reports that they are continually being sent home because of their dirty condition. A little fellow who looked about 6 was quite an expert. The children received 20 cents for stringing a thousand tage [i.e., tags] - they tie a knot in a piece of string, and run the string thru [sic] the tag. They moisten the ends of their fingers in their mouths to tie the knots. They can string about a thousand tags in half an hour. Mr. Miller, a mechanic by profession, acquired his hobby through the game of Monopoly. U.S. expert on crop insurance. Washington, D.C., Sept. 21. Considered by agriculture leaders to be the nation's foremost authority on crop insurance, Roy M. Green is now in charge of Division of Agriculture Finance, U.S. Department of Agriculture. 48 years old, Green is a Native of Missouri and a graduate of the U. of Missouri. After teaching Agriculture Economics at his alma mater for a few years he transferred to the Kansas State Agriculture College at Manhattan, Kans., to teach the same subject. In 1934 he was named Vice-President of the Production Credit Corporation at Wichita, a branch of the Farm Credit Administration. Coming to Washington with the Farm Credit Administration in 1935 Green's ability as a crop insurance expert was recognized by Secretary Wallace, who drafted him for his present post. 9/21/37

One of the unsung heroes of the government service is Carroll Smith, research expert in equine fever in the Bureau of Entomology, Department of Agriculture, who since 1927 has allowed himself to be fed alive to a horde of mosquitoes. After a feeding on his arm, Mr. Smith lets the mosquitoes bite an infected guinea pig, after which they are permitted to bite an uninfected one. Method for preserving sweet cream indefinitely discovered by Government expert. Washington, D.C., Jan. 26. Dairymen the world over will benefit from a method discovered by Owen E. Williams, of the Bureau of Dairy Industry, U.S. Department of Agriculture, whereby sweet cream can be preserved indefinitely in sodium chloride, common table salt. To 100 pounds of cream testing 40 per cent butterfat, 7 pounds of salt are added. When the cream is to be delivered once a week from the farm to the creamery, enough salt is placed in the cream jar at the beginning of the week to preserve the week's supply. As more cream is added after each milking, it must be carefully mixed with the salt solution already in the jar. The salt prevents souring and acts as an anti-freeze. To remove the salt, Williams dilutes the thick cream with fresh skim milk and runs the mixture through an ordinary cream separator. The cream may then be used as coffee cream or it may be used in the manufacture of sweet cream butter or in the manufacture of ice cream. 1.
